Made this with leftover raisin challah for brunch. My, oh my! Will surely make this again. Substituted the whole milk with almond “milk”, and used 1 cup of heavy cream. Was just as tasty and rich.

This is delicious. It’s better if you let the bread soak in the custard mixture for several hours, or overnight in the fridge. I like a more custardy pudding, so cut out one egg and one yolk and increased the milk by 1/2 cup. I also used 2 percent milk, and put all of the apples in at once.

Easy to make and very tasty - like all good bread puddings, it's even better the next day. The only change made was using pecans in place of almonds (we recently returned from Georgia with a bag of fresh, shelled pecans) - all agree they were a good choice.

If you’re assembling it in advance, do you still hold part of the apples in reserve, to top the pan after the first baking, or put the whole thing together?

Deb

I removed the pod before the first apples were tossed into the bread.

Baked 6 apples with a bit of brown sugar. Cut them up into chunks and added them to cream-milk-egg mixture along with a handful of dried cranberries and another handful of golden raisins. All of it went into a baking dish with a cover. Moist, deliciousness! Will be baking this again!

I will definitely do this with pecans, rather than almonds, but that is just personal preference!

Berlin Sally

Delicious- made with pecans. It’s worth the effort! A perfect Rosh Hashanah and/or break the fast dish.

Where one is instructed to, "Transfer apples and any liquid to a large bowl," presumably the pod is left behind.

Really delicious and forgiving recipe, easy to adapt. I didn’t have a full loaf, nor 6 apples, so I scaled down ingredients based on what I had & personal preference (mixed half & half, almond milk, tiny bit leftover heavy cream). Haven’t cooked apples in honey before, that gave an interesting flavor. Not sure if the step of baking with foil was really needed. I just baked uncovered because my mixture was well soaked and no nuts.

Mixed all apples in at once.sat for couple hours before baking. Pecans on top. Great with chicken sausage Also slightly reduced sugar

Becky

Added the apples and almonds in first step before baking to make life easier- came out great. Decreased sugar to 1/4 cup and think I could have even decreased a bit more or substituted maple syrup. It was delicious but I often think these recipes have too much sugar. Time in the oven was spot on - came out perfect!

Puttercup

Made as instructed— delicious. Will make again - a new family favorite.

Has anyone made this without apples?

Chantelle

Probably the best bread pudding I've ever made. Was so light, fresh tasting with the apples. Only had whole milk so used that for everything instead of the cream. Had a bajillion leftover brioche hot dog rolls from a boat trip - happy for a way to use them up!

Bronwyn

I used just oat milk and it worked just fine. I also used just five eggs in the custard. I really enjoyed this but next time I would skip the almonds.

mstratos

Adding a bit of bourbon during the reduction. Was fantastic, will make again!

Wonderful recipe and a big hit. Used 1 cup heavy cream, 1.5 cup almond milk. Used Tbs vanilla extract and Tbs almond extract. Much more cinnamon, maybe double. Had quite a bit of extract apple syrup, which I reduced and think it really added to the top crust caramelizing. New fan favorite.

I used sourdough ends that I had in the freezer and cut them up into big chunks (more like a bread pudding). I started with only 2 cups of liquid as I saw in some of the notes, but ended up adding more to get the bread better soaked. I also used some maple sugar as I realized I had run out of regular brown sugar. I would make this again as it was easy to put together and my kids loved it!

Have made this a couple times and apples in bread pudding works extremely well. If you prefer a spicier apple pie like I do, try scaling spices from your favorite recipe (eg, cinnamon, allspice, ginger, nutmeg, cardamon) and cooked with the apples. Also consider using brown/granulated sugar mix rather than honey. Very tasty.

Kate

Originally noted delicious. Which it is. But I could have done without the honey. I also made it more like a custard which ended up being delicious. Homemade whipped cream was a win!

I didn't bother peeling the apples, and it was fine. Didn’t have a vanilla bean, but a good glug of extract was great. Now, I'm thinking of trying it with maple syrup. Thoughts?
